I admire eggs, a magnificent ingredient that can transform into anything. From fluffy meringue to crispy fried egg, their potential is endless. There are no shortcuts. Starting with gentle whisking, straining the mixture to break down the protein, and slowly cooking on low heat, you need patience. When it comes to my design process, I carefully select simple ideas, extract the essence, choose the right tool, and create amusing dishes full of emotion. Garnishes with details are a must and dash of humor if needed. Binding the simplest ingredients with thoughtful, detailed execution, I will serve you the best eggs you’ve ever had.
